OK, so that custom fields gives you the option to add Drop down menu such as color and sizes etc. and text fields to add quantity.

Is there any way the text field could be used a for adding text to an item, say for example you offer a product to sell for kids and it has a personalization option. Is there anyway to add a inpt text field for the customers to add a name to an item.

Yes you are correct , custom fields allow you to designate product options which will then show on your sales receipt so you know what to give the customer. If you want the price or weight if the product to change with the option use Pricing Options to automatically control that.
